  • 1/4 cup roasted salted peanuts
  • 1/2 tbsp peanut oil (or oil of choice)
  • 1 garlic clove, minced
  • 1 shallot, minced
  • 1 tbsp coconut flour
  • 1 tbsp roughly chopped cilantro + whole cilantro leaves to garnish
  • 2 medium zucchinis, Blade C
  • For the sauce:
  • 2 tbsp freshly squeezed lime juice
  • 1 tbsp fish sauce (or hoisin sauce, if you’re strict vegetarian)
  • 1/2 tbsp soy sauce
  • 1 tbsp chili sauce (I used Thai chili garlic sauce)
  • 1 tsp honey


Method to prepare:

Break the eggs and put aside.Take a bowl and put all the ingrediants into it and mix well.and put it aside.Take peanuts and put them in a grinder and just grind it lightly so that it becomes small pieces.keep it aside.Take large skillet and put it on the stove with low flame.In that add oil,garlic and shallots.stir well until the shallots cook well.In this add some sauce and mix well and cook until sauce becoems thick.In that add zucchini noodlesand cilantro and mix well.cook it and noodles will be cook then add eggs and peanuts.and mix well and cook it for some time.Garnish it with cilantro leaves and lime wedges.

  • 6 medium zucchini or yellow squash
  • 1 tsp salt
  • 1 lb shrimp, peeled and deveined, tails on
  • 1 T olive oil
  • 1 shallot, finely sliced
  • 2 T sriracha sauce
  • 1 T tomato paste
  • 1 tsp brown sugar
  • 2 T butter
  • salt and pepper
  • fresh basil, thinly sliced


Turn them into tacos:

Method to prepare:

Take zucchini and with veggetti make it into thin peices like curly noodles.Take a pot and put water into it.Add salt into it.Cook the zucchini noodles and pour all the water and noodles but keep one cup of water.Take one bowl and mix pepper,salt,brown sugar,sriracha and tomato paste.Take a pan and heat olive oil in it.put shallots in the oil and fry it.after that put it in sirracha mixture.Add shrimp and saute and fry well.sit the butter and reserved water and make it into sauce.put the shrimp on the zucchini noodles and put sauce on it.For garnishing put fresh herbs.

5.Miniature Sweet Potato Casseroles

  • ½ Cup vegan mini-marshmallows
  • ½ Tablespoon olive oil
  • 1 Whole egg
  • ½ Teaspoon nutmeg
  • ½ Teaspoon cinnamon
  • Salt and pepper to taste
  • 1 Large sweet potato peeled,Blade C
  • Olive oil cooking spray



Method Of Preparation:

Take a large skillet heat it over medium heat and coat it with cooking spray.Put sweet potto noodles and season it with salt,pepper,nutmeg and cinnamon.Cook it until noodles have softened.As they cook noodles will turn into bright orange.Take a bowl and place noodles in it and crack over the egg.Stir it well so that it will coat all the noodles.Take out two 6oz noodles in it to pack the ramekin half way full.Place a piece of wax paper over the ramekins  and push it to cover the noodles.Place a can of tomatoes,beans etc and press firmly down onto the noodles.Place the two ramekins in the refrigirator for about 15 minutes.Once the noodles are cooled remove the cans and paper from the two ramekins.Take a large skillet and place it on the medium low heat and add olive oil to it.Now carefully over the skillet turn one ramekin over and tap the bottom with one hand until the noodles comes out.Repeat the process for the other Ramekin.

Now cook the noodle buns for about 4 minutes and flip over and cook for 3 minutes until noodles becomes compact.You can notice a slight char on both sides.while buns ae cooking set the oven to the medium high broil.Take a baking tray and coat it with cooking spray.Place noodle buns on the tray and top with marshallows.Pack the marshallows in to cover the top of the bun.Now place the marshallow topped buns into the over and broil for about 2 minutes or until the tops of the marshallows will becomes brown lightly.Remove from the oven and serve on a platter or cut into quarters and serve with toothpicks.


6.Gluten-Free Apple Carrot Latkes

½ Teaspoon coarse kosher salt
2 Eggs
½ Teaspoon baking powder
4 Tablespoon flour
½ large gala apple minced
7 large carrots shredded thin with Veggetti
Method Of Preparation:

Take a large Skillet and heat Palm Shortening over high heat.use it to coat the bottom of the pan.Take the eggs and beat it throughly.Combine all the ingredients and cook well.Take an ice cream scooper and scoop out carrot and apple mixture into the pan and spread it for about 3 inches.Fry it for 2 minutes on each side well until it becomes brown and crispy.Take a slotted spatula to move it from skillet to paper towels.Serve hot.
